KING
BEAN BURGERS Makes
8 - 10 burgers |

Called
KING BEAN because the Soya bean is known as the king of
beans. These
burgers are protein packed with a nutty texture and
distinctive flavour.
Another good recipe for children.
12oz/350g
cooked soya beans, 1
tbsp/15ml sunflower oil, 1
tbsp/15ml paprika, 1
tsp/5ml ground cinnamon, 3
tbsp/45ml grated onion. 4oz/100g
mushrooms, finely sliced,
1
tbsp/15ml dark soy sauce, 3oz/75g
bulgar wheat, 7fl.oz/195ml
light vegetable stock, Black
pepper, 3
tbsp/45ml sunflower seeds, 1
medium egg, 2oz/50g
plain flour, White
breadcrumbs to coat.

1) Place the cooked Soya beans into a food processor and blend until smooth. Alternatively place the beans into a large mixing bowl and mash to a smooth puree with a potato masher. 2) Heat a large non-stick frying pan above a moderate heat. Add the oil and when hot stir in the spices. Add the grated onion and stir-fry for one minute. Reduce to a fairly low heat and thoroughly stir in the mushrooms and the soy sauce. Cover and cook for 5 minutes stirring occasionally. 3) Stir in the bulgar wheat and pour on the stock. Cover and simmer until all of the liquid has been absorbed, about 10 minutes, stirring occasionally. Meanwhile chop and toast the sunflower seeds. 4) In a large mixing bowl combine the Soya bean puree, the bulgar mixture, the sunflower seeds, the egg and the flour. Season with some pepper. 5)
When the mixture has cooled slightly form into 8 - 10
burgers, coating each one in breadcrumbs.
Gently fry in a little sunflower oil until golden
brown and crispy.
n.b.
Soya beans need to be cooked in a pan of water for two and
a half to three hours.
For the first hour the pan should have the lid
removed to destroy and toxins which may be present in the
skin of the beans.
